We Love Organic, Locally Sourced Produce

The use of locally sourced produce and ingredients is a core part of our philosophy.Our vegetable garden in Sant’Antonio di Mavignola keeps us well supplied with locally grown produce, guaranteed to be fresh since it has virtually 0 food miles. This allows us to make the most of local produce and to restore a bond with the region, learning to appreciate typical flavours and culinary traditions.

Fighting Food Waste with “Too Good to Go”

Our mission is to ensure that no food goes to waste. Il Gallo Cedrone recommends signing up to the “Too Good to Go” initiative.

Supporting Project Yak

Il Gallo Cedrone restaurant supports this scheme to promote yak breeding in the Italian Dolomites. The local council of San Lorenzo Dorsino, alongside the Adamello Brenta Natural Park and a local farm support the breeding of these long-haired cattle in our region. Native to northern Tibet and the mountainous regions of China, the yak has colonised some particularly hostile environments, at high altitude among the tundra and rock faces.
